I say "I paint in oil" when using only one kind of oil, typically linseed oil.
I say "I paint in oils" when using other kinds of oil on top of linseed oil.
And then there are painters who achieve a matte finish by using turpentine only, no linseed oil. They can, however, legitimately say that they "paint in oil" because every tube of oil paint does contain some linseed oil.
